I was so happy when Vidalias and other sweet onions became widely available. I love onions but regular onions often don't agree with me. Ingredients:
4 medium sweet onions |
1 stick butter |
1 can cream of mushroom soup |
1 cup grated cheese |
1 cup milk |
2 eggs |
12-14 saltine crackers, crumbled, divided |
Directions:
1. Saute onions with butter. 2. Butter a 1 1/2 quart casserole and line with half the cracker crumbs. 3. Pour onions and butter over the crackers. 4. Spread the soup over the onions. 5. Beat eggs and combine with milk. 6. Pour egg/milk mixture over the soup. 7. Spread rest of cracker crumbs on top. 8. Sprinkle grated cheese over all. 9. Bake at 350 about 30 minutes. |
