Vidalia Onion And Swiss Cheese Casserole |

With vidalia's in season, they are always on our table in one form or another Ingredients:
3 cups vidalia onions, roughly chopped |
2 tsp butter |
2 tsp flour |
1 cup chicken broth |
1 (5 1/2 ounce) can evaporated milk |
1/2 tsp salt |
1/2 tsp pepper |
1 cup swiss cheese, grated |
1 cup cracker crumbs |
butter to dot on top of casserole |
Directions:
1. Preheat oven to 375 2. Boil onion chunks for 15 to 20 minutes 3. Drain and rinse 4. Melt butter in a saucepan 5. Stir in flour, broth and milk, stirring constantly until thickened 6. Add onions, salt and pepper 7. Put mixture in a 1 1/2-quart casserole dish 8. Top with cheese, then cracker crumbs 9. Dot with butter 10. Bake for 30 minutes |
