VICTORY DANCE GREEN BEANS DATED 1961 This recipe came from an estate sale. I obtained it when I purchased the family collection from the O'Reilly Estate in Fort Worth, Texas in 1988. Notation on card indicates this was served every Sunday at family dinners. Ingredients:
2 pounds fresh green beans |
1 large white onion |
1/4 cup diced bacon |
1 cup mayonnaise |
2 hardboiled eggs chopped |
1 tablespoons horseradish |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
juice of 1 lemon |
1-1/2 teaspoons minced parsley |
Directions:
1. Cook fresh green beans with 1 large onion and diced bacon in a little water until tender. 2. Drain well then combine remaining ingredients and toss with hot beans and bake until bubbly. |
