This recipe was given to me by a cousin on our visit to Nebraska. It's a nice change from the traditional meat loaf. You can grind up your own ham from leftovers or the local butch will do it if you ask.
Ingredients:
1 lb ground pork
2 lbs ground ham
1 egg
1 cup cracker, crushed
1 cup milk
salt & pepper, to taste
1 cup chili sauce
1 teaspoon mustard
1 cup brown sugar
Directions:
1. Mix loaf ingredients together well. (Using your hands seems to work best, I slip a plastic bag over my hand to keep clean.) Shape into 2 loaves and place on jelly roll pan.
2. In small bowl, mix together sauce ingredients and spread evenly over loaves.
3. Cover loosely with foil and bake 325 for 1 hour. Uncover and bake an additional 20 minutes.
