This recipe was given to me by a cousin on our visit to Nebraska. It's a nice change from the traditional meat loaf. You can grind up your own ham from leftovers or the local butch will do it if you ask. Ingredients:
1 lb ground pork |
2 lbs ground ham |
1 egg |
1 cup cracker, crushed |
1 cup milk |
salt & pepper, to taste |
1 cup chili sauce |
1 teaspoon mustard |
1 cup brown sugar |
Directions:
1. Mix loaf ingredients together well. (Using your hands seems to work best, I slip a plastic bag over my hand to keep clean.) Shape into 2 loaves and place on jelly roll pan. 2. In small bowl, mix together sauce ingredients and spread evenly over loaves. 3. Cover loosely with foil and bake 325 for 1 hour. Uncover and bake an additional 20 minutes. |
