This was in Libby's old cook book. Ingredients:
1 1/2 cups sifted flour |
1 1/4 cups oatmeal |
1 1/2 cups brown sugar |
3/4 cup melted butter |
1 teaspoon cinnamon |
4 cups rhubarb |
1 cup sugar |
1 teaspoon vanilla |
2 tablespoons cornstarch |
1 cup water |
red food coloring |
Directions:
1. Mix flour, oatmeal, brown sugar, melted butter and cinnamon together until crumbly. 2. Press 1/2 of the mixture into a greased 9x13 pan. 3. Cover with rhubarb. 4. Combine remaining ingredients in saucepan; cook until thick and clear. 5. Pour cooked mixture over rhubarb. 6. Top with remaining crumb mixture. 7. Bake for 1 hour at 350 degrees Fahrenheit. 8. Serve with cream. |
