I really enjoy this before our grilled salmon in the summer.
Ingredients:
3 medium sized leeks, thoroughly cleaned and sliced (white part only)
1 medium sweet onion, peeled and thinly sliced
2 tbs. butter
4 medium potatoes, peeled and thinly sliced
4 cups chicken stock (i like kitchen basic, in the box)
1 or 2 cups heavy cream
salt and white pepper, to taste
chopped chives
Directions:
1. Saute leeks and onion in the butter; add the potatoes and chicken stock. Simmer, covered, for about 15 minutes, or til tender. Put through a sieve, blend in your blender or process in your food processor til smooth. Add cream, to your taste, and seasonings. Chill thoroughly. Serve sprinkled with chives.
