Created at Ritz-Carlton Hotel in 1910 Just a fancy name for a cold cream potato soup,but its pretty fair,if you like cold potato soup. Ingredients:
2 leeks(1-1/4 lb.) |
1 medium onion,chopped(1cup) |
4 teaspoons instant chicken bouillon granules |
1/4 to 1/2 teaspoon salt |
1-1/2 cups instant potato flakes |
2-1/3 cups milk |
1 cup whipping cream |
snipped chives |
Directions:
1. Chop white part of leeks. 2. In large saucepan,mix leeks,onion,water,bouillon granules and salt. 3. Bring to a boil over high heat. 4. Reduce heat,cover and simmer 10 minutes. 5. Pour mixture into blender container. 6. Add potato flakes and 2/3 cup milk,cover and blend on high until smooth. 7. Pour into a large bowl,stir in remaining 1-2/3 cups milk and whipping cream. 8. Force mixture through a fine sieve. 9. Cover and refrigerate 8 hours or overnight. 10. Serve cold with a sprinkling of chives. 11. Serves 8 |
