This is a fantastic, healthy chili recipe. No one can ever tell that it's good for them too...Enjoy! Ingredients:
1 pound ground turkey or lean ground beef |
1 to 1-1/2 cups chopped onion |
3-4 garlic cloves, minced |
1 medium green pepper, seeded and chopped |
1-15.5oz. can dark red kidney beans, drained and rinsed |
1-15.5oz. can black beans, drained and rinsed |
1-15oz. can whole kernal corn, drained |
1-14.5oz. can diced tomatoes, undrained |
1-15oz. can tomato sauce |
1-8oz. can tomato sauce |
1/4 cup water |
2 tablespoons chili powder |
tabasco sauce, to taste, optional |
1 teaspoon salt |
reduced fat shredded cheddar cheese |
light sour cream |
Directions:
1. In a large pot, cook ground turkey and onion over medium-high heat, 8-10 minutes; drain well. 2. Add garlic and green pepper, and cook 1-2 minutes. 3. Stir in all beans, corn, diced tomatoes (with liquid), tomato sauce, water, chili powder, tabasco sauce (if using), and salt. 4. Bring to a boil; reduce heat to low. 5. Cover and simmer 20-30 minutes, stirring occasionally. 6. Serve topped with cheese and sour cream 7. NOTE: This is NOT a spicy chili. Add spice to suit your tastes. |
