I was looking thru some old cookbooks and came across this recipe. I can't wait to make this for my family and friends. Ingredients:
1 cup tomato, cubed |
1/2 cup onion, thinly sliced |
1 cup bell pepper, thinly sliced |
1/3 cup balsamic vinaigrette |
1 (16 ounce) package frozen cheese tortellini |
4 cups broccoli florets |
1/2 cup fresh basil, chopped |
1 (5 ounce) package lettuce |
1 cup mozzarella cheese, cubed |
Directions:
1. Bring a large pot of lightly salted water to a boil. Meanwhile, combine tomato, onion, pepper and dressing in a large bowl. Leave at room temperature. 2. Add tortellini to boiling water, cook as package directs, adding broccoli to pot 5 minutes before tortellini is done. 3. Drain, rinse under running cold water. Add to tomato mixture, add basil and toss to mix. 4. To serve, Arrange 1 cup of lettuce on plate. Top with Tortellini mixture and mozzarella. |
