When it comes to good food, I'll do ANYTHING. But if it's easy, I'll do it more often. I know it's past Labor Day, this is great with roast chicken or pork, as well as barbeque. Ingredients:
1 bag of your favorite cabbage-mix for slaw |
1-2 jalapenos (if you don't want it too spicy, seed and de-vein) |
2-3 cloves garlic ( yep i love this stuff) i use more. |
healthy handful fresh cilantro, stems and leaves |
2-3 tbs yer favorite mayo (not salad dressing) |
sea salt and fresh ground black pepper to taste |
Directions:
1. Dump the cabbage mix in a big bowl, set aside 2. In a food processor or mini-processor, put everything, EXCEPT lemon juice and mayo. 3. Process until everything til finely chopped. 4. Dump on top of cabbage mix. 5. Add 2 Tbs of mayo, squeeze all the juice from that lemon, salt and pepper. Stir gently, don't bruise the cabbage. 6. If you want it creamier ( and more fattening), add more mayo. Enjoy. |
