These small cookies date from the 17th century and are perfect with a good novel and a cup of tea! This is a french variation. Sweet and buttery, soft and delicious. They will disappear quickly, but luckily it is a very simple recipe ;) Also try dipping them in a glass of cold milk or hot apple cider if they get too crispy. Read more . To change things up replace the lemon zest with cinnamon and 30g of flour with cocoa powder. Ingredients:
90g salted butter |
90g icing sugar |
2 egg whites |
90g all-purpose flour |
1 tsp. vanilla |
1/8 tsp. lemon zest |

Directions:
1. Preheat oven to 200ºC 2. Cream the butter and icing sugar together until it becomes smooth and fluffy 3. Mount the egg whites until stiff, than incorporate them into the butter mixture gently 4. Fold in flour, add vanilla and lemon zest and mix well 5. Butter and lightly flour a cookie sheet 6. Place dough in thin strips on cookie sheet, approx. 3 cm apart 7. *Note: they will be sticky so you can try using a pastry bag if you like (it will make them look nicer in the end) but it takes away from the simplicity of the recipe 8. Bake at 200ºC for 6-8 minutes or until the tops become a gentle golden colour and the sides are a light brown 9. Remove from oven and let cool completely on a cookie rack 10. Enjoy with your favourite hot drink or with ice cream for dessert! |
