These are incredible. I obtained this recipe from my Aunt Barbara when I inherited the family collection in 1980. These are on my holiday cookie platters every year and no matter where I take these, I am always asked for the recipe. Read more . Enjoy Ingredients:
2-1/2 cups all purpose flour |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1 cup dark brown sugar firmly packed |
1/2 cup granulated sugar |
1 cup butter softened |
2 large eggs |
2 teaspoons pure vanilla extract |

8 ounces cream cheese softened |
1/4 cup granulated sugar |
1/4 cup apple butter |
Directions:
1. Mix flour, baking soda and salt. 2. In a separate large bowl blend brown sugar, sugar and butter until well combined. 3. Add eggs and vanilla then beat at medium speed until light and fluffy. 4. Add flour mixture and blend at low speed until just combined. 5. Shape dough into marble size balls then place on ungreased cookie sheets 1” apart. 6. Bake 10 minutes at 300 then transfer to a cool flat surface. 7. Blend cream cheese and sugar on medium speed until fluffy. 8. Add apple butter and beat until smooth and thoroughly combined. 9. Spread 1 teaspoon of filling onto the flat side of a cookie. 10. Top with another cookie to create a sandwich. 11. Repeat with remaining cookies and filling. |
