I was feeling nostalgic for my Aunt Dawn's granola. She passed just after Thanksgiving. Ingredients:
3 cups old fashioned oats (not instant) |
3/4 cup coarsely chopped walnuts |
3/4 cup coarsely chopped almonds |
3/4 cup coarsley chopped pecans |
1/4 cup sunflower seeds |
1/2 cup pure maple syrup |
2 - 3 tbs raw honey |
1 tsp vanilla |
1/2 tsp cinnamon |
1/2 tsp sea salt or kosher salt |
1/2 to 3/4 cup dried blueberries (or cherries, cranberries, raisins.... or a comination of any or all) |
Directions:
1. Preheat oven to 300 degrees. 2. In a large bowl, combine oats, nuts, seeds, cinnamon, salt and berries. 3. Combine syrup, honey and vanilla. Pour over oats and nuts, and combine well. 4. Spread mixture out on a cookie sheet that has either been sprayed generously with Pam or covered with parchment paper or a silpat. 5. Bake for 30 minutes. 6. Remove from oven and let cool for at least 5 minutes. 7. Gently break apart and store in an airtight container. 8. Serving size is about 1/2 cup. |
