Very Good Pancakes

This recipe is from my church's cookbook. It is so simple, but rivals any other pancake recipe I've tried, and I've tried quite a few!
Ingredients:
2 cups flour
2 cups milk
2 eggs
1/4 cup oil
4 tablespoons baking powder (or 1/4 cup)
1 teaspoon salt
Directions:
1. Mix all ingredients very well and fry on a hot griddle or frying pan which has been lightly greased.
2. You can make 8 large (6 diameter) pancakes by dropping by 1/2 cupfulls or 16 smaller pancakes by dropping by 1/4 cupfulls.
3. I have success by cooking them on medium-low heat and flipping when they look dry around the edges.
