This basic starter came from my 500 Bread Recipes e-book. The book and this server are assuming unbleached all-purpose flour are being using, but whole wheat, spelt, and white-wheat will probably work as well. The one I am posting is the most popularly and widely used variety because it's cheap, easy, and only takes one day opposed to weeks.
Ingredients:
2 cups unbleached all-purpose flour
2 1/4 teaspoons active dry yeast (one 0.25-oz packet)
water (to make it thick, see directions)
Directions:
1. Sift the flour and yeast together, and add enough water to make it into a thick batter- there's no exact measurement.
2. Set it uncovered in a warm place for 24 hours.
3. Once it's fermented for at least 1 full day, it's ready to be used in any bread, pancake, pizza, etc. recipes that call for using sourdough starter.
