Very Dairy Strawberry Shortcake Dip |

I (and my sister) created this recipe to enter into the state fair. It got a second place in a big contest! Enjoy! Ingredients:
for dip |
· 1 package (2 ounces) cream cheese |
· 1 tbs. powdered sugar |
· 1 1/2 tbs. strawberry jam (divided) |
· 2 tbs. milk |
· 1 carton (4 ounces) heavy whipping cream |
for shortcakes |
· 1 1/4 cups flour |
· 1 3/4 tsp. baking powder |
· 1/2 tsp. salt |
· 1/8 cup sugar |
· 1/4 cup shortening |
· 1 egg yolk |
· 1/2 cup buttermilk |
· 1/2 pound strawberries, cleaned and cut into 1/2 inch slices |
· 12 toothpicks |
Directions:
1. For dip, in medium mixing bowl, cream together cream cheese, powdered sugar, 1/2 tbs. strawberry jam, and milk. 2. In another bowl whip cream. 3. Fold the cream into the cream cheese mixture. 4. Chill. 5. Swirl remaining jam into dip before serving. 6. For shortcakes, in a large bowl, combine flour, baking powder, salt, and sugar. 7. Cut in shortening until crumbly. 8. In a small bowl, beat together the egg and buttermilk. 9. Stir into flour mixture just until moistened. 10. Turn out onto a floured surface; 11. knead 3-4 times. 12. Roll to 1/2-inch thickness; 13. cut with a 1 inch shaped biscuit cutters. 14. Place on prepared baking sheet. 15. Bake shortcakes in preheated oven until golden brown, about 10 to 15 minutes. 16. Allow to cool completely; 17. cut the biscuit in half 18. put half onto a toothpick, than put one strawberry piece, than one more biscuit half. 19. Serve with the dip. |
