Ingredients:
1 teaspoon vegetable oil |
1 cup onion, chopped |
3 garlic cloves, minced |
1 cup mushroom, chopped |
1 teaspoon dried basil |
1 teaspoon dried thyme |
1 teaspoon dried marjoram |
1 teaspoon cumin |
2 cups beans, cooked |
2 cups brown rice, cooked |
3 eggs, slightly beaten |
2 cups low fat cottage cheese (or some combination of both) or 2 cups ricotta cheese (or some combination of both) |
1/4 cup feta cheese, crumbled (optional) |
2 tablespoons soy sauce |
salt |
black pepper |
cayenne |
2 medium tomatoes, sliced |
1/2 cup parmesan cheese, grated |
1/2 cup fine dry breadcrumb |
Directions:
1. Preheat oven to 350°F. 2. Heat oil in large skillet; sauté onion, garlic and mushrooms until onion is nearly soft. 3. Add all remaining ingredients except final three. Mix well and spread mixture in a large greased or sprayed shallow baking dish. 4. Arranged tomato slices over the top. Mix together parmesan and crumbs and sprinkle over tomatoes. 5. Bake for 40 minutes. |
