Versatile Chicken Hashbrown Caserole |

This is a pretty simple casserole that would be good to bring for a pot-luck. Since the ingredients are pretty basic, you can easily think of many alterations. All measurements below are approximate. Ingredients:
3 chicken breasts - cube or shredded |
1 (30 oz) bag of hash browns |
1 can cream of chicken soup |
1 c sour cream |
1 bag (8 oz) shredded cheddar (could mix with other like gouda ) |
1 large onion - chopped |
minced garlic, parsley flakes, salt & pepper, cayenne pepper to taste |
1/2 - 1 sleeve of ritz crackers - crushed |
could possibly add chopped green peppers, green chilies, mushroom pieces, finely chopped broccoli ( ), chopped ham or bacon for added flavor. |
Directions:
1. Cook chicken (w/ S&P) with chopped onion until cooked through 2. Chop or shred chicken 3. Mix in bowl with all remaining ingredients, save Ritz 4. Press into 9 x 13 casserole dish (un-greased was fine) 5. Top with crushed crackers 6. Bake uncovered 400 for 1 hour 7. This dish, like most we make was good with a little hot sauce - we suggest just a little Green Tobasco or Frontera |
