Nice addition of cornmeal into these delicous pancakes
Ingredients:
2 eggs beaten
2 medium zucchini grated
1/4 cup whole grain flour or as needed
1/4 cup cornmeal
1/2 tsp salt
Directions:
1. Beat eggs
2. Mix all ingrdients to make a pancake batter, adding more flour if needed
3. Cook on a hot skillet a few minutes on each side
4. or fry in hot oil in a skillet
