Great baked beans with a taste of maple syrup. Ingredients:
1lb. dried navy beans(about 2c.) |
cooking spray |
11/2c chopped yellow onion |
1/2c diced salt pork(about 4oz.) |
51/2c water |
1/2 to 3/4c maple syrup,divided(i use 1/2 c) |
11/2tbs dijon mustard |
1tsp. salt |
1/4tsp hot pepper sauce(such as tabasco) |
Directions:
1. Sort and wash beans;place in a large bowl. Cover with water to 2 above the beans;cover and let stand 8 hours or overnight. Drain beans. 2. Preheat oven to 325. 3. Heat dutch oven over med-high heat. Coat pan with cooking spray. Add onion and pork to the pan;saute 5 mins.. Add beans,51/2c water,1/2c syrup,mustard,salt and pepper sauce;bring to a boil. Cover and bake at 325 for 21/2 hours or till beans are tender,stirring occasionally. Uncover and bake an additional 30 mins or till mixture begins to thicken. Stir in remaining 1/4c syrup.
