There are several versions of this soup. I have tried 3 of them and this one, which was passed down to me from my mom, is my favorite. Ingredients:
1 -1 1/4 lb ground beef |
1 (32 ounce) box chicken broth |
4 cups water |
1 (1 1/4 ounce) envelope french onion soup mix |
1 (14 1/2 ounce) can diced tomatoes |
2 -3 stalks celery, chopped |
1 (16 ounce) bag frozen mixed vegetables |
2/3 cup small shell pasta (or other small pasta) |
1 tablespoon worcestershire sauce |
1 dash hot pepper sauce |
Directions:
1. In a large pot brown ground beef. 2. Drain fat. 3. Add broth, water, celery, soup mix and tomatoes. 4. Bring to a boil, reduce heat and simmer for about 5 minutes. 5. Add pasta and frozen vegetables, along with worcestershire sauce and hot pepper sauce, and cook for 10 minutes more. 6. Serve with parmesan cheese, if desired. |
