Ingredients:
2-1/2 cup(s) sifted cake flour |
3 teaspoon(s) baking powder |
1 teaspoon(s) salt |
3 eggs |
1-1/2 cup(s) sugar |
1-1/2 teaspoon(s) vanilla |
1-1/3 cup(s) heavy cream |
1/2 cup(s) butter or margarine |
1 teaspoon(s) lemon rind |
1 package(s) confectioner's sugar, sifted |
3 to 4 tablespoon(s) lemon juice |
Directions:
1. Heat oven to 350 degrees F. Grease and flour two 9 x 1-1/2-inch layer cake pans. Sift flour, baking powder, and salt together. Beat eggs, sugar, and vanilla at high speed on electric mixer about 3 minutes or until light and fluffy. Add flour mixture alternately with heavy cream, beginning and ending with flour. Scrape bowl frequently. Pour into prepared pans. Bake 25 to 30 minutes or until toothpick in cake comes out clean. 2. Meanwhile for the frosting: 3. Blend butter or margarine, lemon rind, and half the sugar. Beat in remaining sugar. Add lemon juice gradually, adding just enough to make a smooth frosting of good spreading consistency. Frost the cake when cake is completely cooled. |
