The Complete Book of Oriental Cooking, Myra Waldo, 1964. Ingredients:
2 chicken breasts |
3 teaspoons cornstarch, divided |
1 tablespoon soy sauce |
2 tablespoons oil, divided |
1 (4 ounce) can mushrooms |
2 garlic cloves, minced |
2 teaspoons ginger, crushed |
Directions:
1. Cut the chicken into match stick like pieces. 2. Toss with 2 teaspoons cornstarch, soy sauce and 1 tablespoon oil. 3. Let stand 10 minutes. 4. Mix remaining cornstarch with mushroom liquid. 5. Add remaining oil; heat. 6. Add chicken, garlic, and ginger. 7. Cook for 1 minute, stirring constantly; do not let the chicken brown. 8. Add mushrooms. 9. Add liquid. 10. Cook for 5 minutes until thickened; do not overcook. |
