Basically a spinach quiche. I modify this regularly, with different veggies and cheeses. OAMC: There are three OAMC options. 1) Make the slurry and freeze (I use freezer bags). Thaw and stir (or squish if in a Baggie), and continue. 2) Pour into pie pan and freeze the whole thing; 3) cook, cool, and freeze individual wedges for microwaving later. I don't use a pie crust. Prep time does not include thawing frozen spinach. Onion should be thin-sliced or chopped, but program doesn't recognize sliced onions. It also doesn't recognize frozen CHOPPED spinach but that's what you should be using. Ingredients:
1 (10 ounce) bag frozen spinach |
1/4 cup onion |
2 large eggs, well beaten |
3 tablespoons romano cheese |
1 cup milk |
1/2 cup zucchini (optional) or 1/2 cup celery (optional) or 1/2 cup frozen mixed vegetables (optional) |
2 tablespoons bisquick (optional, at serving time) |
Directions:
1. Thaw spinach and completely press out the liquid. Mix remaining ingredients together, then add spinach. Mix well. You can freeze at this point or continue:. 2. Pour into greased 9 inch pie plate. Freeze. If serving tonight, you can add 2 Tablespoons flour or Bisquick if you wish. Otherwise: Bake at 375 degrees for 40-45 minutes. Cut into wedges (which you can wrap and freeze). 3. If cooking frozen uncooked pie, thaw completely before cooking. |
