Veggie Twice Baked Potatoes |

Twice baked potatoes with veggies mixed in. Just to put a twist on regular twice baked potatoes. Ingredients:
4 large baking potatoes - baked |
2 tb olive oil |
1/2 green pepper - chopped |
2 cloves garlic- chopped |
1/2 cup sliced mushrooms- chopped |
1 tb fresh parsley - chopped |
3tb butter |
3/4 cup milk |
1 cup shredded cheddar cheese - divided in half |
salt and pepper to tast |
Directions:
1. Preheat oven to 450 2. bake potatoes until done approx 1 1/2 hours 3. preheat the oil in a small skillet and saute' the garlic, green pepper , parsley and mushroom until soft 4. remove potatoes and spoon out the insides reserving the skins 5. combine potatoes, butter ,milk and 1/2 of the cheddar - mash 6. add garlic pepper mushrooms and mix. 7. fill the reserved skins with the mashed potatoes top with cheese and bake an additional 20 mins until cheese is melted. |
