Just something random from what I had in my fridge, but it's pretty good, so I thought I'd share. Also, if you have kitties, they love the leftover tuna water! Ingredients:
1/2 red onion, diced |
1/2 leek, stem only, diced |
1 celery rib, diced |
1 -2 teaspoon salt, to taste |
1 tablespoon fresh dill, minced |
1 -2 teaspoon fresh parsley, minced |
1 -2 tablespoon apple cider vinegar, to taste |
1 -2 teaspoon olive oil, to taste |
2 (5 ounce) cans tuna, drained |
Directions:
1. Chop the onion, sprinkle with salt in a medium bowl and mix well. 2. Add the rest of the veggies and herbs to the bowl, mixing as you add each ingredient. 3. Add the vinegar and oil, mix well. 4. Add the tuna, mix well. |
