One of my favorite warm weather salads. I also like to add artichoke hearts. Ingredients:
12 oz. box tri-color spiral pasta |
1 c fat-free italian dressing |
1 c diagonally sliced red or green (or both) peppers |
1 c sliced zucchini |
1 c fresh broccoli |
4 1/2 tsp. minced onions |
1 tsp. salt (optional) |
1/2 tsp. pepper |
1/4 tsp. garlic (fresh or powder) |
Directions:
1. Marinate peppers, zucchini, broccoli and onion with Italian dressing. 2. Cover and refrigerate for three hours. 3. One hour before serving, boil pasta according to directions. 4. Toss pasta with marinated vegetables and seasoning. 5. Refrigerate for 30 minutes before serving. |
