Veggie Soup With Dumplings

Ingredients:
1 cup chopped onion
1 cup diced carrot
3 sliced celery
3 cups vgetable broth or 3 cups chicken broth
4 diced potatoes
4 chopped tomatoes
2 garlic cloves
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon celery salt
1/4 cup flour
1/2 cup water
1/2 cup chopped cabbage
1/2 cup shredded spinach
1 cup frozen peas
dumplings
1 cup shredded carrot
1 tablespoon parsley
1 cup cold water
1 cup shredded cheddar cheese (garnish)
Directions:
1. Cook onions, carrots, and celery for 6-8 minute.
2. Stir in broth, potatoes, and tomatoes, garlic, salt and pepper. Simmer 20-30 minute.
3. Mix flour and water until smooth.
4. Add to soup, and cook until thickened.
5. Stir in cabbage, spinach, and peas.
6. Mix together dumplings adding water slowly until moist.
7. Drop into soup by the tablespoon full.
8. Cover and simmer 15 minute or until dumplings are done.
9. Garnish with cheese.
