Super fast and easy delicious one dish meal that appeals to non-vegetarians, too. Ingredients:
5 potatoes |
1/2 cup milk |
3 tablespoons butter |
1 large onion, chopped |
1 garlic clove, minced |
1 1/2 teaspoons dijon mustard |
1 teaspoon dried thyme |
1/2 teaspoon dried basil |
salt and pepper |
1 (14 ounce) can diced tomatoes |
1 (14 ounce) can green beans, drained |
1 (14 ounce) can sliced carrots, drained |
1 (19 ounce) can cannellini beans, drained and rinsed |
1/2 cup cheddar cheese |
Directions:
1. Peel,dice and boil 5 potatoes for mashing. 2. Sauté onion and garlic in 2 T. butter in casserole pan. 3. Add: Dijon mustard, dried thyme, Dried Basil, salt and pepper. 4. Add: tomatoes, green beans, carrots, and cannellini beans. 5. Mix together. 6. Drain then mash potatoes with milk and 1 T. butter. Spread mashed potatoes over top of mixture. 7. Top with grated cheddar cheese. 8. Bake 25 minutes at 350. |
