Awesome salad full of veggies! Modified from a Hungry Girl recipe :) Ingredients:
2 cups butter lettuce |
1 cup baby spinach |
2 1/2 ounces solid white tuna packed in water |
1 whole tomato, diced |
1/3 large cucumber, diced |
5 baby carrots, sliced |
1/4 cup canned beets, drained and chopped |
2 tablespoons frozen corn kernels (microwave for 30 sec to thaw) |
2 tablespoons diced onions |
2 tablespoons garbanzo beans |
1 tablespoon feta cheese |
Directions:
1. Combine all ingredients in a bowl with your favorite dressing and then shake it up (or toss it, but I like to shake it!). |
