Easy, healthy, filling. Substitute your veges of choice. Adapted from WW recipe. Ingredients:
1 avocado, chopped |
1 tablespoon lemon juice |
1 (14 ounce) can artichoke quarters in water, drained |
2 (14 ounce) cans garbanzo beans, drained |
1 cucumber, sliced |
1 tomato, chopped |
1 yellow bell pepper, chopped |
1 head romaine lettuce, shredded into bite-size pieces |
1 cup fat free cheese, shredded |
4 ounces fat-free italian salad dressing |
Directions:
1. Sprinkle lemon juice over avocado. 2. Toss together all ingredients. 3. Chill for several hours or overnight. |
