I had this recipe in my file and am not sure where it originated from. It is a great quiche which does not have a crust. This will help to cut calories if you are dieting.. Ingredients:
1 tablespoon chopped green pepper |
1 small onion, chopped |
1 cup mushroom, chopped |
1 cup broccoli, chopped (may use frozen) |
1 cup spinach, chopped |
6 eggs |
2 cups cream |
8 ounces shredded monterey jack cheese |
8 ounces shredded swiss cheese |
1/2 teaspoon vinegar |
1/2 teaspoon dried tarragon |
1/8 teaspoon garlic powder |
1/8 teaspoon ground nutmeg |
1/8 teaspoon dried parsley |
1/8 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Preheat oven to 350 degrees. In large skillet, saute peppers, onions and mushrooms til translucent. Remove from heat and set aside. In large bowl mix eggs and cream together. Stir in shredded cheese, sauteed veggies, broccoli and spinach. Stir in vinegar with seasonings. Divide into two glass pie pans. Bake in oven 55-60 minutes. |
