This is for Lukshk. This isn't a figure friendly recipe, but for someone who needs to hold on to what they have, or God willing, put on a couple of pounds, this goes down real easy and tastes great! Ingredients:
2 c. frozen veggies, cooked in the microwave and drained |
1 onion, diced |
2-3 stalks of celery, diced |
2 tbsp. butter |
1 (10.75 ounce) can condensed cream of potato soup |
1 cup whole milk (or you could do 1/2 milk and 1/2 heavy cream) |
1/2 cup water |
ground black pepper to taste |
1/2 cup shredded cheddar cheese |
crumbled bacon |
Directions:
1. In a large saucepan over medium heat, saute the cooked veggies, celery, and onion in the butter for 5 minutes. Stir in the soup, milk, water, and pepper. Mix well and heat through, about 15 minutes. Add cheese and stir until melted. Top w/ crumbled bacon. 2. *You could always make a lower-fat version of this recipe and it would be great too. |
