I found a recipe on the web and did some adjusting to suit our taste.Top with Creole Sauce for a fabulous main course! I serve with steamed vegetables & couscous. This makes for a low fat, healthy, good tasting meal! Ingredients:
1 lb ground turkey |
1 medium carrot, shredded |
1 small zucchini, shredded and squeezed dry |
1 small onion, chopped |
1/2 bell pepper, finely chopped (red or green) |
1 teaspoon italian seasoning |
2 tablespoons worcestershire sauce |
1 cup breadcrumbs |
2 medium eggs |
1/2 tablespoon sesame seeds |
2 cups water |
1 (4 ounce) can tomato paste |
30 ml sugar substitute (liquid) or 1/2 cup sugar |
1/2 cup cider vinegar |
1 1/2 cups celery, chopped |
1/2 cup onion, chopped |
1 teaspoon italian seasoning |
Directions:
1. Place all ingredients for the sauce into a sauce pan and bring the mixture to a boil. 2. Reduce the heat to simmer, cover and cook for 2 hours. 3. Preheat oven to 400 degrees. 4. Spray a pan with nonstick cooking spray. 5. Crumble the ground meat into a large bowl; add the shredded carrots, zucchini, onion and pepper. 6. Add the Italian seasoning, sesame seeds, bread crumbs and Worcestershire sauce. Mix ingredients lightly with a fork until well blended. 7. Form into loaf and cook uncovered for 60 minutes or until done. 8. At the end of the cooking time, check the sauce for thickness. If the sauce is thin, thicken it with 1/4 cup cornstarch dissolved in cup of water. Serve immediately with Creole Sauce. |
