This is a great side dish for many types of recipes; and for vegetarians it can be served in larger portions to make a delicious dinner entree. Ingredients:
5 cups chopped broccoli |
1 1/2 cups chopped yellow squash |
1 small red onion, chopped |
2 carrots, peeled and chopped |
2 tablespoons olive oil |
1 cup light mayonnaise |
1 cup shredded cheddar cheese, divided |
1/2 cup fine dry breadcrumb |
1/4 teaspoon paprika |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Preheat oven to 325°F In a large skillet cook broccoli, squash, onion and carrots in oil over medium-high heat 5-7 minutes or until crisp-tender. In a small bowl, stir together mayonnaise and 1/2 cup of the cheese; stir into vegetables. Turn vegetable mixture into a lightly greased 2-quart casserole dish. 2. In a small bowl, stir together breadcrumbs, paprika, salt, pepper and remaining 1/2 cup cheese; sprinkle over vegetables. 3. Bake 20-30 minutes or until topping is lightly browned. |
