This is a fantastic veggie salsa from a famous local recipe. You can make it sweet, spicy, limey, juicy, or thick, based on your tastes. The recipe as is produces a thick, slightly sweet, perfectly spiced salsa. Read more It makes a large amount, so cut it in half if you want less. Ingredients:
8 cups chopped ripe tomatoes |
3/4 cup white vinegar |
8 cloves garlic, finely chopped |
1 1/2 teaspoons black pepper |
1/8 cup salt |
1/8 cup white sugar |
1/8 cup brown sugar |
1/3 cup chopped fresh cilantro |
3 cups chopped onions |
1/2 bundle green onions, chopped |
3 cups green peppers, chopped |
2 cups banana peppers, chopped |
2 12 oz. cans tomato paste |
Directions:
1. Combine everything in a large pot except onions, peppers, and tomato paste. 2. Bring to a boil, then reduce heat. Simmer for 30 minutes. Stir occasionally. 3. Add peppers and onions. Simmer another 10 minutes. 4. Add tomato paste one can at a time until mixture is thick. 5. Variations: Substitute other peppers to taste. Add hot peppers for spicy salsa. Add a few tablespoons of lime juice for a citrus-y taste. Blend mixture for a juicier salsa. |
