This dish can easily be made with left over cooked rice and any vegetables you may have around Ingredients:
2 tbps peanut oil or any oil you have on hand |
green beans cut to bite sized pieces |
sliced mushrooms |
3 cloves of garlic finely chopped |
1 onion finely chopped |
broccoli cut to bite sized pieces |
2 eggs |
2 cups of pre-cooked rice (brown or white) (room temp, crumble w/ fork, set aside) |
1/4 cup oyster sauce or soy sauce |
salt and pepper to taste |
1 tsp sriracha hot sauce (optional) |
Directions:
1. In a hot skillet, fry two eggs over medium or to your liking then set aside. 2. Add oil to skillet and fry onions and garlic till onions are transparent 3. Then add green beans, mushrooms, broccoli or other vegetables to the oil and stir fry till Broccoli is a bit tender. 4. Add the rice first and mix thoroughly with veggies then add oyster sauce and stir till rice is coated well and browned. 5. Continue to stir fry on high and add salt, pepper and hot sauce to taste. 6. Serve immediately with egg on top 7. Enjoy! |
