This is a family favorite and a family joke...anyone that wishes to marry into our family must eat and like the veggie enchiladas :) As is typical for me, I don't really pay attention to servings/yield, so sorry I'm not helpful in that. Ingredients:
2 green peppers, chopped |
2 small onions, chopped |
6 tablespoons salad oil |
1 (6 ounce) can tomato sauce |
1 (15 ounce) can tomatoes |
2 tablespoons chili powder |
12 ounces sharp cheddar cheese |
1 head lettuce |
1 (12 ounce) package corn tortillas |
Directions:
1. heat salad oil. 2. add can of tomatoes, green peppers, onions, tomato sauce and heat for 30 minutes. 3. add chili powder at the end of heating. 4. in small skillet, heat 2 T salad oil. 5. heat tortilla long enough to get hot on each side. 6. fill with sauce, cheese. 7. roll up and add toppings (cheese, lettuce, sour cream, whatever you like). |
