Vegetarian Chili. Ingredients:
10 lbs spanish onions, diced |
10 lbs red peppers |
10 lbs green peppers |
10 lbs kidney beans, cooked |
5 lbs celery, diced |
5 lbs carrots, diced |
5 lbs red bulgur wheat |
40 lbs tomatoes, strips |
20 lbs tomato puree |
8 cups tamari |
2 cups lime juice |
1 cup canola oil |
1 cup olive oil |
2 cups garlic |
2 cups chili powder |
2 cups oregano |
2 cups cumin |
6 bunches cilantro |
8 ounces chipotle peppers |
8 jalapeno peppers |
2 tablespoons crushed red pepper flakes |
2 gallons water |
Directions:
1. Saute all veggies in oil. 2. Add wheat, tomatoes, tomatoes and water, bring to a boil. 3. Add all spices, cooked beans and simmer for one hour. 4. Add cilantro and lime juice. |
