Easy,delicious soup. Can be done in slow-cooker. Cook till veggies are tender,add cheese and cook 5 mins more. Ingredients:
1 med. onion,chopped |
1 celery rib,chopped |
2 small red potatoes,cut in 1/2 cubes |
23/4c water |
2tsp reduced-sodium chicken bouillon granules. |
1tbs cornstarch |
1/4c cold water |
1 can (103/4oz) reduced-fat ,reduced-sodium condensed cream of chicken soup,undiluted |
3c frozen california-blend vegetables,thawed |
1/2c chopped fully cooked lean ham |
8oz. reduced-fat process cheese(velveeta) ,cubed |
Directions:
1. In a large non-stick saucepan coated with cooking spray,cook onion and celery over med. heat till onion is tender. Stir in the potatoes,water and bouillon. Bring to a boil. Reduce heat;cover and simmer 10 mins. 2. Combine cornstarch and cold water until smooth;gradually stir into soup. Return to a boil;cook and stir for 1 to 2 mins or till slightly thickened. Stir in condensed soup until blended. 3. Reduce heat;add vegetables and ham, Cook and stir until vegetables are tender. Stir in cheese till melted. |
