I got this recipe from a friend of mine a long time ago. It is easy to make and is delicious. Ingredients:
10 ounces frozen broccoli |
10 ounces frozen cauliflower |
4 ounces sliced mushrooms, drained |
8 ounces sliced water chestnuts, drained |
1/4 cup diced onion |
1/4 cup minute rice |
1/4 cup skim milk (any) |
1 (10 3/4 ounce) can cream of broccoli soup (you can use reduced fat) |
1 teaspoon butter |
8 ounces velveeta cheese, cut up (you can use 2% velveeta or use swiss cheese) |
Directions:
1. Rinse frozen vegetables under cold water and drain. 2. Mix all ingredients together and place in a casserole dish. 3. Bake at 375 degrees uncovered for 45 minutes. Stir occasionally. |
