lots of layered veggies Ingredients:
1 lb potatoes, thinly sliced |
1 med zucchini, thinly sliced |
1/2 lb onions, thinly sliced |
1 small eggplant, peeled and sliced |
1 lb tomatoes, sliced |
1 1/2 cups (6 oz) shredded part-skim mozzarella cheese |
1/4 cup grated parmesan cheese |
1/2 tsp dried basil |
1/2 tsp salt |
1/4 tsp pepper |
1/4 cup water |
Directions:
1. Layer half of the fist 10 ingredients in a 3qt baking dish coated with nonstick cooking spray. 2. Repeat layers. 3. Pour water over the top. 4. Cover and bake at 375 for 60-75 minutes or until tender. 5. Uncover; bake 5 min longer or until lightly browned. |
