Veggie Burgers

Slightly different. Easy and good.
Ingredients:
1 tablespoon oil (divided)
1/4 cup onion, chopped
1/4 cup green pepper, chopped
1/4 cup carrot, chopped
1/4 cup frozen chopped broccoli (drained and finely chopped)
2/3 cup white kidney beans or 2/3 cup great northern bean, drained
1 egg, lightly beaten
1/3 cup seasoned dry bread crumb
Directions:
1. Saute vegetables in half of oil until soft- about 1 minute. Cool slightly. Mash beans and mix with egg and bread crumbs. Add veggies. Chill for 20-30 minutes. Form patties. Fry in remaining oil. Serve on buns and with your favorite toppings. Makes 3-4 patties.
