Veggie Burger
Ingredients:
4 tsp. olive oil
1/2 cup onion - sauteed
1 1/2 cup mushrooms, diced/sauteed
1 1/2 c. eggplant, diced/sauteed
1 c. diced red pepper, sauteed
1 c. diced green pepper, yellow sauteed
3 tbsp. 1 % milk
1 large egg
1/2 c. shredded parmesan cheese
1/2 c. shredded mozzarella cheese
1/2 c. dried bread crumbs
1 tbsp. chopped garlic
Directions:
1. Preparation
2. In a medium bowl place the following ingredients:
3. 1/2 c. onions
4. 1 1/2 c. mushrooms
5. 1 1/2 c. eggplant
6. 1 c. each of red and yellow pepper
7. 3 Tbsp. milk
8. 1 large egg
9. 1/2 c. parmesan cheese
10. 1/2 cup mozzarella cheese
11. 1 Tbsp. garlic
12. Mix well .
13. Form into 6 patties of equal size.
14. Layer patties, with wax paper between every two patties.
15. Place patties in a large Ziplock bag, squeezing out as much air as possible.
16. Cooking
17. Thaw completely in the fridge.
18. Heat a large non stick frying pan to medium high and pray with a cooking spray.
19. Add the veggies patties to the pan and cook approximately 4 minutes per side.
20. Heat whole grain buns in the oven while burgers are cooking.
21. Top the burgers with lettuce, tomato slice and red pepper jelly.
22. Serve with sweet potato fries.
