Very simple and satisfying. Ingredients:
1 tbsp olive oil |
2 cloves garlic, minced |
1 large carrot, peeled and chopped |
3/4 cup chopped zucchini |
1/2 cup chopped leek |
3/4 cup chopped celery |
1 19 oz can white beans, drained and rinsed |
1 19 oz can chili kidney beans, undrained |
1 28 oz can diced tomatoes |
1 litre vegetable or chicken stock |
1 tsp chili powder |
1 tsp oregano |
1 tsp basil |
Directions:
1. heat oil in large skillet 2. add garlic, saute one minute 3. add vegetables and saute for 10 minutes or until beginning to soften 4. in a large pot, combine all ingredients and simmer for 45 minutes. |
