Adapted from Eating Well Ingredients:
1 tablespoon olive oil |
1 large onion, chopped |
2 large tomatoes |
1 cup cooked rice |
1 (15 ounce) can black beans |
1 tablespoon chili powder |
1 tablespoon lime juice |
1/4 teaspoon salt |
1/2 cup fresh cilantro |
1/2 cup salsa |
1 head romaine lettuce |
1 cup shredded reduced fat cheddar cheese |
2 1/2 cups tortilla chips |
4 lime wedges |
Directions:
1. 1. Heat oil in a large nonstick skillet over medium heat. Add onion and cook, stirring, until the onion begins to brown, about 5 minutes. Coarsely chop 1 tomato. Add it to the pan along with rice, beans, chili powder, and salt. Cook, stirring frequently, until the tomato cooks down, about 5 minutes. Let cool slightly. 2. 2. Coarsely chop the remaining 1 tomato. Combine with cilantro, lime juice, salsa bean mixture and cheese in a medium bowl. 3. 3. Top lettuce with the bean mixture. Serve sprinkled with tortilla chips and lime wedges. |
