Vegetarian Steamed Dumplings |

My version of Vegetarian Dumplings. Ingredients:
1 red onion, sliced |
1 tbs minced ginger |
1 cup sliced shiitake mushrooms |
1 cup spinach |
1 cup carrots, shredded |
1 cup chopped chives |
1 tsp pepper |
1 tsp sesame oil |
1 package wonton skins |
Directions:
1. In a wok or large sauté pan, add a little oil and sauté onions and ginger. 2. Add the mushrooms and stir. Add the spinach, carrots and chives. Season. 3. When mixture is soft, place in colander to drain. Add the sesame oil when mixture is cooled. Check for seasoning. 4. Using the wonton skins, make half moon dumplings keeping the bottom flat. 5. In a large saucepan bring 8 cups water to boiling. 6. Drop the wontons, one at a time, into boiling water. Simmer, uncovered, about 3 minutes. 7. Remove from heat and rinse with cold water; drain well |
