Ingredients:
2 tablespoon(s) vegetable oil
4 clove(s) garlic minced
1 whole(s) onion chopped
3 whole(s) carrots chopped
2/3 cup(s) tomato sauce
2 can(s) red kidney beans drained and rinsed
1 can(s) garbanzo beans drained
1/2 cup(s) vegetable broth
2 teaspoon(s) dried basil or tarragon
2 teaspoon(s) dried oregano
2 teaspoon(s) dried rubbed sage
1/4 cup(s) worchestershire sauce
1/4 cup(s) ketchup
20 ounce(s) frozen mixed vegetables
4-6 cup(s) mashed potatoes
2 stalk(s) celery chopped
Directions:
1. Heat oil in large saucepan. Add onion, carrots and garlic. Soften for 4 minutes. Stir in all other ingredients except potatoes. Simmer for 15 minutes. Remove bay leaves. Pulse with stick blender to thicken. Spread over bottom of baking dish. Top with mashed potatoes (cheese may be added to topping). Freeze as is, or bake immediately for 20 minutes at 350.
