Super easy to make vegetarian style Saffron Rice with carrots, peas, and green onions. Based on Bette Hagman's Recipe in The Gluten-Free Gourmet Cooks Comfort Foods. Ingredients:
2 tb. olive oil |
1/2 c grated carrots |
3 c vegetable broth ( i like the powdered stuff you just add to water) |
2 c. basmati rice |
1 1/2 tsp. corriander |
1/2 tsp. salt |
1/4 tsp. crushed saffron |
1/3 c. sliced green onions |
1/4 c peas |
fresh cracked black pepper to taste |
Directions:
1. Place wok on medium heat, and cook carrots in oil until tender. 2. Add broth and heat to boil. Add the rest of ingredients except peas and green onions, stir it all up really good. 3. Reduce heat to low, cover with lid, and cook 15-20 minutes, or until done. (closer to 20 min. for me) 4. At the very end, stir in your peas and green onions, Season with pepper. Serve hot. |
