Homemade vegetarian refried beans. Ingredients:
2 lbs kidney beans |
1 1/2 tbsp corn oil |
2 tbsp garlic, finely chopped |
1 1/2 tbsp chili powder |
1 tbsp garlic powder |
1 tbsp onion powder |
1 tsp salt |
1 cup water |
Directions:
1. Rinse and soak the beans overnight, then set to boil. Lower heat to a simmer and cook about 1 1/2 to 2 hours until soft. 2. Heat the corn oil in a large saucepan or wok. Add the garlic, stirring constantly until it just starts to brown. Toss in the chili powder and then add the beans. 3. Using a potato masher or a fork, mash the beans until they form a paste, adding water a tbsp at a time if they become to dry or thick. Note: If using a fork, be careful not to scratch your pan. 4. Once well mashed, add the garlic powder, onion powder and salt. Mash again and add water, 1 tbsp at a time, until creamy. 5. Serve warm. |
